Katy’s Summer side dish
I’m off on my holidays to the wild and windy west of Ireland so I thought I would leave you with a little something for the nice weather, more specifically a summer dish for BBQ season. It’s one of my favourites and it’s really simple. I’ve seen similar dishes before but this is my own version so there’s no hardened recipe, it’s kind of a ‘wing it dish’.
All you need is – (for up to 10 people)
Green beans 3-4 packs
Beetroot 1 vacuum pack of 4
Pine nuts – 1 bag
Goats cheese – 2 (I used the rindless one from tesco)
Balsamic – to drizzle
Steam the green beans, I prefer al dente but it’s up to your taste. Leave them to cool.
Meanwhile, toast the pine nuts. I find it easiest to put them on a low heat in a non stick pan. Pine nuts go from toasted to burnt quite quickly so keep an eye. I didn’t use the entire bag, save some for another day, I love them on pasta.
Slice the fresh juicy beetroot keeping any juice from the pack to drizzle over the dish.
Pop the cooled beans in a large dish and then add the sliced beetroot along with any juice.
Next cut up the goats cheese and spread those pieces over the beans and beets.
Sprinkle the toasted pine nuts all over. Finally a drizzle of balsamic vinegar finishes it off nicely.
That’s it! It looks really colourful and impressive but it’s very little effort. Enjoy!
