Prawn & Sun Blushed Tomato Pasta
Firstly, Happy New Year everyone. I hope you had a fantastic and fabulously festive time of it. I haven’t really bothered with any New Year resolutions this year, I am however trying to do ‘Dry January’!! So far so good, although that glass of red at 7 when my daughter has gone to bed is sorely missed. I am hoping it will make me more proactive in the evenings, and the mornings for that matter!
So anyway, onto my first post of the year.
When you have a busy life balancing work, kids, family, social life etc sometimes you just want quick fix easy meals that taste great. So I figured I would start sharing a few of the ones I like to do at home, particularly the really quick ones!
I started making this pasta dish after I got addicted to a ‘ready meal’ version of it that I used to grab for late nights at work.
What you need –
Linguine or spaghetti ( we generally use wholewheat spaghetti but when I’m feeling the need for starch the only way is linguine!)
King prawns (cooked or uncooked)
Sun blushed tomatoes (you can get a tub of them from the deli counter in the supermarket)
Clove Garlic
Olive oil
Chilli ( I cheat and use a tsp of ‘Lazy Chilli’ )
Parmesan
Method – Takes about 15 minutes
Get the pasta on the boil. While that’s on, pour a good slug of Olive Oil into a pan followed by the chilli and the garlic on a medium heat.
When the pasta has been on for about half the cooking time throw in the sun blushed tomatoes and the prawns. (if using raw prawns cook until lovely and pink).
Test the pasta and when ready, drain and pour in over the tomatoes and prawns and mix it up.
It’s ready, told you it was quick! It’s also pretty healthy especially if you use wholewheat spaghetti). Sprinkle with grated or shaved parmesan and serve with a glass of wine (for those not doing dry January!).

Another twist on your dish is add some Suger Snaps in the water for the final minute of the pasta cooking and then add a little basil when you stir everything together. Makes the whole dish feel a little fresher.
